Dominique Terrier grew up in the Jura, the son of a winemaker who converted his estate to organic farming back in 1968, long before it was fashionable. Dominique worked alongside his parents until he was 28.
 

In 1995 he struck out on his own, taking over vineyards in the Mâconnais and Beaujolais and founding Domaine des Deux Ânes. Drawn south by the Languedoc, he moved the domaine to the Corbières in 2000, settling in Peyriac-de-Mer and converting the vineyard to organic farming from day one, then to biodynamics in 2010.
 

In 2017 he struck out again, taking over the vines of Château Saint-Auriol in Lagrasse, right in the heart of the Corbières appellation, and founded Dom & Terre. Over the following two years he was entrusted with old parcels of Carignan and Grenache, along with Viognier and Roussanne, spread across limestone and clay soils on the hillsides and riverside plots around the village.
 

The harvest is done entirely by hand, the grapes sorted in the vines before they reach the cellar. In the cellar Dominique works as naturally as possible, no added sulphites, no commercial yeast, no additives, letting each vintage and grape variety decide how long it spends on its skins.
