It is at the foot of the fortified church of Hunawihr, that since 1963, the Mittnacht family has been producing wines of high expression.
Today, it is Marc Mittnacht, son of André, his wife Paule and his son Pierre who work the 11 hectares of vines spread over the best terroirs of Hunawihr and Ribeauvillé.
For more than 20 years now, the vineyard has been conducted in Organic and Biodynamic Agriculture.
The diversity of the plots that make up our vineyard, the geology of our soils and our environment, but above all our desire to live our profession as naturally as possible, are all aspects that have led us to engage in organic and then certified biodynamic agriculture since 1999.
Our desire not to use weedkillers, fertilizers and chemical insecticides but to let the flora and fauna present in our vines grow, to compose our own compost or to develop our biodynamic preparations specific to the needs of the plant has a triple purpose: to guarantee a healthy product, to give the vine the means to defend itself naturally and to preserve our terroirs to safeguard the originality of our Protected Designation of Origin.
The vine, like all plants, is dependent on its environment: the earth of course, but also the ambient air, the density of light, etc. The solar and lunar rhythms imprint on it impulses which are concentrated on the roots, leaves, flowers or fruits.
These days are gathered in a calendar and are decisive for our periods of work in the vineyard and in the cellar: the periods of work which are devoted to the soil are privileged in root days, the periods of care of the vine in fruit days like the periods keys to the life of wine (racking, bottling, etc.).
Based on observation and experimentation, the biodynamic practice uses two preparations which act on the soil, on the roots and on photosynthesis: these are horn dung and horn silica.
These two preparations are energized before use by staying one hour in water which is imparted a rotary movement in one direction then in the other, the force of the movement activating the memory of the water. In addition to its applications, herbal teas and plant decoctions (nettle, willow, horsetail, etc.) added to very small doses of Bordeaux mixture or sulfur flowers are used in the vineyard. In this way, the vine again becomes able to defend itself against its natural enemies.
