Organic and biodynamic cultivation
 
Nose is very Alsace, ripe orchard fruit, subtle floral and herbal notes, little yeast.
 
Palate has a soft round texture with a nice mellow freshness. You get some baked apple, little caramel. little pear with a slightly earthy, stony character, but all very soft.
 
The finish is long and dry, with citrus, ripe orchard fruit and a gentle bitter-mineral edge.
The schist-rich mountain terroirs really comes through.
 
It has much more weight and concentration than a simple, fresh Sylvaner, while retaining the grape's characteristic freshness
 
A Sylvaner you can age for a bit
 
The grapes are pick slightly overripe and fermented with wild yeast
Aged in old Alsace vats for 7 months on fine less
